Monterey Sausage Pie

Monterey Sausage Pie

1 pd bulk pork sausage (skinned)
1 c chopped onion
1 c chopped red pepper
1/2 c chopped fresh mushrooms
3 t minced garlic
2-1/2 c grated monterey jack cheese, divided
1-1/3 c milk
3 eggs
3/4 c biscuit/baking mix
3/4 t sage
1/4 t pepper

Directions:
In a large skillet, cook the sausage, onion, pepper, mushrooms and garlic over medium heat until meat is no longer pink; drain. Stir in 2 cups of cheese. Transfer to a 9" deep dish pie plate.
In a small bowl, combine the milk, eggs, biscuit mix, sage and pepper. Pour over sausage mixture.
Bake at 400 for 20-25 minutes or until a knife inserted in the center comes out clean. Sprinkle witht he remaining cheese and put back in oven for 2 minutes more or until cheese is melted. Let stand 10 minutes before serving. Enjoy.
